		<description>I&#039;m not sure I qualify in the &quot;wise readers&quot; category, but here are my two cents anyway!  ;-)  If I were you, I would limit my baking to one day a week.  To me, that seems like a happy medium--it reduces your time commitment (and presumably, your stress level) while still keeping your foot in the door, so to speak, and keeping your customers somewhat satisfied.  If you only bake every Friday, for example, they&#039;ll quickly learn to expect that, and I think the adjustment could be smooth.  But what do I know?  :)

		<description>Well...that might involve drawing a diagram and creating a flow-chart!  Maybe I can show you with a mock-up tomorrow when we are there for your graduation party.

Part of it involves mixing up all the icing and putting almost half of it in a bag the night before (so I can snip the end off the bag and squeeze it out onto the cookies).

Another part is getting up at 3:00 a.m. and starting to mix up the HUGE dishpans of dough (it nearly over-did my hand mixer).  I started baking the cookies at 4:30 (because it took that long to get the dough beat together; I made it in two large dishpans).

One more trick is I loaded the dough into a huge bag and cut a corner off (of course I had to refill it at times) and squeezed the dough out onto the cookie sheets.  This helped have round, uniform cookies, and it saved a lot of time since I could go &quot;blop-blop-blop&quot; squeezing out dough blobs rather than going through 5 times the motions dipping it out of the bowl with a spoon and scraper.

The cookies bake for 8 minutes in my oven, so I did 4 min. on the bottom rack, then 4 min. on the top rack.  I then let them cool a few minutes, scooped them onto cooling racks, and reloaded the cookie sheet.  I only ever used 3 cookie sheets--two in the oven, and one in the unloading/loading zone.  After unloading it, I scraped the crumbs into the trash can before reloading it.  

In the few moments I was waiting on something to bake, I would ice and wrap the cool cookies.  I did make the mistake of stacking them in rows on their sides like Oreos in boxes (that then went in the freezer).  However, this created a flat side which wasn&#039;t very attractive.

Oh, one more trick--I started with a clean kitchen!  That always makes things go better.

One thing that was a challenge was finding more than 8 seconds to take a bathroom break!</description>
